Merivale will be celebrating Negroni Week this year from Monday 4- Monday 10 June across its extensive portfolio of venues with $15 classic Negronis across participating Merivale restaurants, and a selection of specially crafted Negronis across three of its leading bars – J&M, the intimate cocktail bar in the historic Angel Hotel; Charlie Parker’s, the local Paddington bar exploring original flavours and innovative techniques; and Palmer & Co; the 1920s speakeasy in the heart of the CBD.

In partnership with Campari, each leading bar will offer its own special take on the classic digestif, specially designed by Merivale’s best bartenders  – Charlie Parker’s ‘Strawberry & Balsamic’ with Campari, Strawberry Gum infused Pisco, Lillet Rose, Saline Solution and balsamic vinegar powder; Palmer & Co.’s “The Mont Blanc Summit” with Campari, Beefeater 24, Lillet Blanc, and Apricot Brandy; and J&M’s ‘Caffe Casoni’ with Campari, Bowmore 12, burnt coffee and vanilla sweet Vermouth, a pinch of salt and white cacao dust.

This year, Merivale has also created the top secret Negroni No.5, a mystery recipe which will be tied to a guest guessing competition where guests have the chance to win one of three Negroni Degustation experiences at Uccello The Negroni No.5 will be available in J&M, Charlie Parker’s and Palmer & Co.

The featured Negroni’s will be available for $15 at Palmer & Co., Charlie Parker’s and J&M, which will then become $7.50 Negroni’s as part of Merivale’s ‘Bottoms Up, Sydney’ offer where guests are able to enjoy 49% off ALL drinks in bars and restaurants this June between 5-7pm.
