West Hotel Sydney, a Curio Collection by Hilton hotel, has launched a Summer of Gin collaboration with renowned Sydney distillery, Archie Rose Distilling Co. Throughout spring and summer, a Summer of Gin bar menu inspired by Archie Rose will be served at Solander Dining and Bar. The menu showcases bite-sized bar food infused with gin and native botanical rubs, and cocktails using Archie Rose gins that compliment the flavours. Guest will be able to enjoy the Summer of Gin menu daily, and on Friday nights there will be live music in the bar’s lush open air “jungle” Atrium.
Priced between $14 and $19, Solander Dining and Bar’s new menu items include Archie Rose-infused chicken wings, gin-cured salmon gravlax, and a ginger gin chilli prawn dish. New Summer of Gin cocktails include a Lemon Myrtle Gin Fizz ($21), with flavours of lemon myrtle, orange blossom and coconut, and a Chai Bramble served over ice with elderflower, lime and berries ($20).
The collaboration celebrates Archie Rose’s Summer Gin Project, launching two new summer gins ‘Bush’ and ‘Coast’ in time for the summer holidays. Each of these two new limited-edition gins feature distillates made from sustainably sourced local, wild foraged ingredients such as lemon myrtle, pink peppercorn, sea lettuce and farmer’s friend.
Solander Dining and Bar launched in February 2018, beside Sydney’s newest cultural and commercial hub, Barangaroo and iconic Darling Harbour. A 72-seater restaurant and bar offering sophisticated, upmarket dining and botanically-inspired cocktails, it is located in Sydney’s newest boutique hotel, West Hotel, Curio Collection by Hilton, at 65 Sussex Street.
Designed by Australian Architecture firm Fitzpatrick and Partners, with interiors by Woods Bagot, the hotel has a modern classic design theme, featuring deep tones with marble and brass accents. A strong botanical theme runs throughout the hotel, most evident in the beautiful open-air jungle atrium and white Waratah motif in the lobby.
Solander Dining and Bar is open seven days, with cocktails served until late. The Summer Of Gin menu will be available over the spring/summer season.
